Pistachios have a long history of use dating back as far as 7,000 BCE in the Middle Eastern and Western Asian regions of the world. Originating in Ancient Persia, pistachio production has remained a staple of the regions agriculture and only recently has the United States surpassed Iran in pistachio production. The United States (California) is followed by Iran, Syria, Turkey, Afghanistan, Greece, and China. Pistachios are a good source of fiber, protein and vitamins while containing no cholesterol.
